Grilled Marinated Bok Choy

Ingredients

  • ¼ cup low sodium soy sauce
  • 3 tablespoons sesame oil
  • 2 cloves of garlic minced
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground ginger
  • 1 pound baby bok choy

Instructions

  • Preheat the grill to medium heat.
  • In a medium bowl whisk together the ¼ cup low sodium soy sauce, 3 tablespoons sesame oil, 2 cloves of garlic , 1 tablespoon honey, 1 tablespoon rice vinegar, ¼ teaspoon red pepper flakes, and ¼ teaspoon ground ginger.
  • Wash the 1 pound baby bok choy and shake off excess water.
  • Add the bok choy to the bowl and toss to coat.
  • Lightly oil the grill. Add the bok choy, close the lid, and cook for four minutes.
  • If you would like more char on the bok choy, flip the bok choy and cook for another two minutes.
  • Remove bok choy from the grill and serve immediately.
  • Drizzle the remaining marinade over bok choy if you choose.

Notes

If you can't find baby bok choy, you can use regular bok choy. Just break each individual leaf off like you would a head of romaine lettuce.
If the leaves start to burn before the stalk is tender, place a sheet of aluminum foil underneath the leaves to prevent them from burning.
Use a grill pan to cook this dish indoors.
After grilling the bok choy, serve it as a side dish or chop it up and add it to your favorite stir fry or soup.
Storage
Store in the refrigerator in an airtight container for 3 to 5 days. Reheat in the microwave.
