Are you looking for ways to add more vegetables to your diet? Me too. It is recommended that we have 2.5 to 3 cups of vegetables a day. While that may not sound like a lot many days I often fall short. One of the best ways to add more vegetables to your diet is to eat vegetables for breakfast.
While I love carb-heavy-breakfast foods I try to limit those meals to the weekends only. During the week I try to focus on quick protein and vegetable-heavy breakfasts. This also gives me more variety to my morning meal choices and challenges me to get creative. While also setting me on a path to make better meal choices throughout the day.
Mornings are busy so I will often prep ahead on the weekends and reheat throughout the week. Here are some of my favorite ideas to help you eat more vegetables for breakfast.
